Cheesy Potato Fries...

Yes to Friday and yes to the cheesy goodness of these oh so delicious cheesy potato fries!  You must try this easy and yummy recipe this weekend, you will not regret it!


~Cheesy Potato Fries~
4-6 potatoes
¼ cup olive oil
Salt, pepper, favorite seasoning salt
1 cup sour cream
½ cup ranch dressing
¼ cup milk
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
½ cup real bacon bits
¼ cup green onions

Cut potatoes into “steak french fries” size.  Place on foiled baking sheet and drizzle with olive oil and lightly toss with tongs.  Sprinkle salts and pepper over the potatoes.  Bake at 400 degrees for 40 minutes or until fork tender.

In a small bowl, mix sour cream, ranch dressing and a splash of milk.

Once the potatoes are done cooking, spread a layer of the sour cream mixture on a platter and lay hot fries on top.  Drizzle remaining sour cream mixture over fries, top that with cheese and finish off with bacon bits and green onions.

If needed, place under broiler for an extra minute or two to melt the cheese.

This recipe is very easy to alter, so don’t be afraid to.  This will just get you started… however, no matter what cheese or spices you use, you must NOT forget to add the sour cream/ranch mixture!  It makes or breaks these cheesy fries.

Off-Grid Home Sweet Home On Facebook...

43 degrees - 5:05 pm - still raining (5.45 inches in the past 48 hours)...

A month ago I started a Facebook page for our blog.  I had received several emails suggesting that I do that, and it gives people another way to “follow” our blog.  I liked the idea because there is a lot of little stuff that happens here on the mountain that never makes into a blog post, but I can do a quick states update on Facebook.  Anyways, go check it out.

Lost And Found...

42 degrees - 8:07 pm - calm, quiet night...

On the way home last night I spotted four kittens that had been abandoned alongside our road.  It took me two nights to catch all of them, two of them are pretty skittish, but here they are!  Aren’t they cute?!?!


We are going to keep one or two of them and are going to look for good homes for the others...if the kids don’t fall too much in love with them in the meantime.

We're Back... Again...

Just got back from a roadtrip to Lewiston, Idaho.  Here are a few photos we took along the way...

We saw some old rail cars so of course we just had to climb around on them.

Snuck in a few hours of horseback riding.  The kids now want a horse!

We're Back...

This past weekend we dropped the kids off with my parents and I snuck away for a “Mom’s Getaway” weekend with the girls while Tony snuck away to "Elk Camp" to go hunting with the guys.
